The ultimate recipe for making homemade mozzarella cheese

Follow this simple recipe to make your own homemade mozzarella. You will need whole milk, white wine vinegar, salt and a little food coloring. Heat the milk with the vinegar and salt until it coagulates, then form small balls of mozzarella and soak them in a bath of preservative liquid. You will obtain a melting and delicious mozzarella in just a few hours!

Ingredients :

  • 1 liter of whole milk
  • 1/4 teaspoon rennet
  • 1 teaspoon of salt
  • 1/2 teaspoon sodium citrate (optional)
  • 1/4 liter hot water
  • 1 tablespoon of white vinegar

Preparation :

  1. In a saucepan, mix the milk, rennet and salt. Heat over medium heat until the milk reaches a temperature of 90°C.
  2. Add sodium citrate (if using) and mix well.
  3. Pour the hot water into a large bowl and add the vinegar.
  4. Pour the hot milk into the bowl of hot water and mix well using a wooden spatula.
  5. Let sit for about 10 minutes, until the mozzarella separates from the whey.
  6. Use your hands to separate the mozzarella from the whey and form it into a ball.
  7. Place the mozzarella ball in cold water for a few minutes to firm it up.
