Follow this simple recipe to make your own homemade mozzarella. You will need whole milk, white wine vinegar, salt and a little food coloring. Heat the milk with the vinegar and salt until it coagulates, then form small balls of mozzarella and soak them in a bath of preservative liquid. You will obtain a melting and delicious mozzarella in just a few hours!
Ingredients :
- 1 liter of whole milk
- 1/4 teaspoon rennet
- 1 teaspoon of salt
- 1/2 teaspoon sodium citrate (optional)
- 1/4 liter hot water
- 1 tablespoon of white vinegar
Preparation :
- In a saucepan, mix the milk, rennet and salt. Heat over medium heat until the milk reaches a temperature of 90°C.
- Add sodium citrate (if using) and mix well.
- Pour the hot water into a large bowl and add the vinegar.
- Pour the hot milk into the bowl of hot water and mix well using a wooden spatula.
- Let sit for about 10 minutes, until the mozzarella separates from the whey.
- Use your hands to separate the mozzarella from the whey and form it into a ball.
- Place the mozzarella ball in cold water for a few minutes to firm it up.
- Your homemade mozzarella is ready to be tasted! You can slice it and eat it as is, or use it in your favorite recipes. Enjoy your lunch !
